We need to get from Segovia to Bilbao on May 8th, a Sunday. Transportation seems limited and we don't want to arrive in Bilbao late at night. Sundays seem to be a problem even with picking up or dropping off a rental car. Any suggestions? Thanks.

I'm seeing, apparently, the same thing you are on the Renfe web site. I'm not sure why service is so thin there. There are more options to San Sebastian, which is 75-minutes by bus from Bilbao, and there are frequent busese. That might be an acceptable back-up plan if there truly are no earlier trains on the day you wish to travel.

After researching all options, we chose to rent a car from Sixt rental car company. They have offices open on Sundays to receive returns.
