I am flying into Valencia and then traveling by train to Barcelona and then Madrid. Is it necessary to book trains ahead of time? Does the cost go up if I book the day of, or do you know if it is a set price?

For the regional trains, it’s usually not necessary (they are normally quite cheap) but I would definitely recommend booking a train between Barcelona and Madrid because it’s the high speed train. I was there last June, booked like 10 days in advance and paid 80 euros for a single.
If your travel plans are confirmed, I’d book asap :)

You will probably pay much, much more if you wait to buy those tickets. Take a look at the fares for today/tomorrow vs. fares for as far out as tickets are currently available on the Renfe website to see this in action.
