I've been reading posts on topics that include questions about this route, including the one where the poster could not see trains on Renfe's website. I am experiencing similar, though I can see a single train (Avlo) for the entire day. (A Sunday in March). In the meantime, I've also checked thetrainline, and lo and behold there are plenty of trains: Ave, Ouigo, Avlo, Iryo... I understand Iryo is a separate (private) provider, so I wouldn't expect to see them on the Renfe site, but the others? I'm planning to buy through thetrainline anyhow, but want to be sure the trains are 'real' and actually running! lol Would appreciate any insight.
What you could be seeing is the effect of an accident on that high speed rail route in January. The route is still closed, with no opening date announced. You should still be able to buy that route, just realize that Madrid to Cordoba (or all the way to Seville) will be by bus service. Trainline may willingly sell you a ticket, in hopes all will be OK, but....
Just an edit, I looked on Renfe and see several options on Sunday March 7, some of the route go out of the way, some look normal. I will add that there are only a few trains, so a very limited schedule is reflected.

Sources at Renfe told El Correo that the company cannot provide a reopening date, as decisions on cancellations depend entirely on information supplied by Adif.”
Looking at the Renfe app, trains from Madrid and a couple other places have been cancelled.

A case where buying direct, rather than from a third party (any third party) will give you better information as RENFE are or should be contacting passengers directly.
