I am looking into fast trains from Barcelona to Madrid and then to Seville. As I try to book the tickets through Renfe it is giving multiple choices for train stations-- which one do I pick for each city? also would you recommend we sue Renfe or Trainline?
Also what is the best way to get to hotel from the train station?
Has anyone taken tours with Madrid-Day-Tours?

Big cities normally have multiple stations - just pick the one that's closest to your hotel. If you want to see all trains arriving or departing from a particular city, pick the option that has the city name and the word 'todas', which means 'all'.
Without knowing which hotels you're staying at, it's not possible to say what the best way of getting from the station to hotel is. I generally default to taxi, but walking and other public transport may be an option depending on where the hotel is.
Normally I would book direct with the train operator, but I do find the Renfe site a little bit frustrating, so have used Trainline before for Spain.
We just took the train from Barcelona to Madrid in August, and I ended up booking online directly with Iryo instead of Renfe. The website was very easy to use, and the prices were reasonable. We departed from Sants, and arrival was at Atocha, so no problem going anywhere in Madrid from there with either local transportation, or taxi (which is what we used with our bigger suitcases.). Are you going directly to Sevilla, or stopping in Madrid for a bit?
We often use Walks for all of our day tours in Europe, and are always pleased. Madrid Day Tours has a lot of reviews of Tripadvisor, so you can read there what people say about the company.

I also recommend Iryo, www.iryo.eu. There is nothing wrong with Renfe's trains but their website could use some improvement, booking with Iryo is much easier.
And yes, it's impossible to recommend the best way to get to your hotel without knowing where it is.
