I would probably stop off somewhere like Nîmes for a couple of nights to go see Pont du Gard.
We found it to be an easy and comfortable journey.
It might be faster to fly but we took the train from Barcelona to Paris. Comfortable and quiet.
As mentioned, there's not much to it, it's quite straightforward and there isn't really anything to suggest or warn about.
As per intermediate stops, I am not that kind myself. If your purpose is to visit Barcelona -assuming you don't have all the time in the world- I wouldn't "waste" precious time. This does not mean there aren't interesting stops (Nimes, Figueres or Girona for example), but stopping in between for a few hours might be a bit of a hassle, logistically speaking.
