We will be flying from the states into Madrid end of May. We will then be going to Barcelona the same day. My question is should we take the train or plane?

We took the train you go from downtown Madrid to downtown Barcelona in three hours. Ultimately, saving you time and hassle. However, we weren't at the airport. It could be more convenient to fly but you'll have to get from the airport to Barcelona.

I am concluding that you have your plane ticket to Madrid already.
Buy the train ticket to Barcelona once you know that the flight is leaving from the USA on time, meaning it is going to arrive in Madrid on time. You can do this if you have internet access on a smart phone on the plane or before boarding the plane. Give yourself 4 hours between the arrival of the plane In Madrid ( to go through passport control/customs and to Madrid Atocha Train Station) and the departure of your train to Barcelona.
Or you can buy a plane ticket from Madrid to Barcelona following the same method describe above so you don't have to leave the airport to go to downtown at all.

before xmas we caught the AVE train from barcelona to madrid ( approx 2.30 hours) we bought 1st class tickets as soon as they became available ( so they were a very moderate price- cheap) the experience was excellent, they served wine, beer& some food throughout the trip ( included). the best fast train experience we have had in europe ( we have done a few in different countries)
at the station only your luggage goes through a scanner ?? ( somewhat unusual) before you enter the fast train area.
