train Madrid Sevilla ...Is it possible to get on and off to visit town on scheduled stop and wait for next train to continue...ie will my ticket facilitate this?

Definitely not if you are booked on the high speed AVE which requires an actual reserved seat on a specified service. Book separate journeys Madrid-Cordoba and Cordoba-Sevilla. What other stops you have in mind??

Unable to do that as far as I know. It is a reserved seat. If you were to get off, you would not be able to get the next train. You will need to purchase separate tickets for each journey.

There is no doubt - you cannot break a journey in this way, there is a reserved seat allocation on your ticket.

No. Even on regional trains (not the high speed AVE), you have to validate your ticket and the validation is only good for so long. It wouldn't give you time to stop for a few hours along the way.
