We will be leaving Seville on a Sunday< March 19 to Jerez by train to meet up with friends.
Should we book our train tickets now, prior to our departure for Spain, or could we buy the tickets once we are in Seville.?

I would just buy them when you are ready to take the train. The savings from buying ahead are fairly small and only applies to the AVILA train. The cost is the same for most trains. And, this leaves you flexible in case you want another round of tapas in Sevilla!

Since you'll be taking an MD train on this route (Sevilla to Jerez de la Frontera), you can certainly wait to buy your tickets once you arrive to Sevilla, as there's no incentive in terms of saving money for this type of train ticket (unlike those for AVE trains).
I'd probably buy tickets (round trip if indicated) a day or two in advance, just in case, since there are fewer trains traveling on Sundays.
