Train fares rise closer to travel dates like airlines?

Probably a no-brainer but I'd like a little clarity on this. To get the best rate I assume you have to lock in your date well in advance and choose the "Promo" (i.e. non-refundable/non-changeable) option. If you want more flexibility you can certainly pay for that in advance, and waiting till a couple weeks before will probably end up in considerably higher fares across the board, like airlines, right? Are there ways to "work the system" I'm not thinking of? BTW I am talking about Barcelona to Madrid.

It is not exactly like airline ticket pricing. With some exceptions, tickets at all price points are theoretically available up until the date of travel. It is just that the cheap tickets tend to sell out earlier except on unpopular routes or at odd times (very early in the morning departures), I have bought the cheapest tickets on the day of or day before travel. You can't plan on it though because they do usually sell out.
