We are driving from Tarifa to Toledo and would like to stop over in a small quaint town along the way. Any suggestions?

ViaMichelin offers up three possibilities, the fastest being a routing through Granada and Jaen that passes rather near Ubeda, Baeza and Almagro. None of those places is what I would call "small", but except for Granada they are relatively non-touristy. Much closer to Toledo you have Consuegra, which I think is known for its windmills; I haven't been there.
The route through Seville is estimated to take about 1/2 hour longer. It goes right past Trujillo, a very interesting back-of-beyond sort of place in Extremadura.
The third option (2 hours longer than the Granada route) is through Cordoba. It goes very near Antequera and Lucena. I haven't been to either place. As Jazz noted, Cordoba would be an A1 stop if you aren't already planning to see it, but it's not small and it's worth more than a few hours.
