I am planning a 7 to 10 day trip to Spain in the second half of Jan 2018. Was thinking of doing Barcelona, Madrid, seville, Granada and Toledo. Maybe delete one or two depending on exact number of days. Some suggestions will help. Have checked the weather in Jan, says 10 hours of Sun and temperatures between 7 to 14. Just wanting to know if stepping out for sightseeing will be excessively cold or undoable in this weather.

Barcelona's winter climate is mild, Andalucia is the warmest, driest place in Europe. You may get some rain, but you may are at least as likely to have sunny days. Madrid could be chilly and Toledo more so, because of the altitude. Highs in the teens (Celsius).
Fly open-jaw. Count nights in Spain, not days away from home. If you have 9 nights in Spain you'll probably have 8.5 days - 1/2 day on arrival and leaving on the morning of Day 10. You'll use about 1/2 day to change hotels/cities. The shortest time to get from Barcelona to Granada is by flying (about 5-6 hours door-to-door). You need 2 nights in Granada to be able to see the Alhambra. 3 nights Barcelona is 2.5 days to see it, then 2 nights Granada, leaves you 4 nights for the rest.
You want to look at where you can fly to....and don't focus on direct flights only. Can you get to Seville? Timing allows for Seville, Granada and Cordoba, return from Seville. I suggest this as it is mild weather in an area where su mer temps can be over 110F. Also, logistically it is the harder to get to than say Madrid or Barcelona (in particular). These are all an easy 3 hour or less by train or bus. Alternative to Seville is Malaga which can be worked into a 10 day trip.
Alternatively, Madrid and Barcelona. Both offer day trips elsewhere.
