I found that there are many restaurants closed for holidays in the month August. Any advise where to find good/authentic place to have dinner for a night or two in each city? We will be spending our trip in Madrid, Seville, Toledo, and Barcelona.

Even though you will be there in August, it is highly likely that you will have plenty of options. For me, i look at Rick Steves or Lonely Planet sites to get ideas.
We will be there in August as well. I also find restaurants just by walking around the city.
Rick's guidebook listings include any major closed periods for the restaurants covered there. Glancing over the Madrid chapter, only a few of those are closed in August - fewer than I would have guessed. Other sources like timeOut.com and ViaMichelin.com will also include this information, if you click through to see all details.
The old idea that Europe shuts down in August is slowly dissolving. While it may have been true 30 years ago, most places are open in August 'cause they want to make money from tourists.
