Stopover suggestion driving between Granada and Toledo

We have an extra day/night to fill between Granada and Toledo. Córdoba is an option, but it's a little out of the way. Maybe it's well worth it, but are there other interesting options south of Madrid? Perhaps a Parador you have discovered off the beaten path? We have a car so could easily take the road less traveled. Thanks for suggestions.

Go to the parador.es/en site and check which paradors are near someplace you may want to stop at.

Since someone else mentioned windmills, in addition to the ones at Consuegra plus it's castle, are the windmills at Campo de Criptana. It's about 30 minutes east of Consuegra off the same road.

Baeza and Ubeda are 2 Unesco sites. Great cities, I have a preference for Ubeda
If you prefer parks, the Sierra de la Cazorla is great, spectacular views at the castle of Segura de la Sierra, and around Hornos. It's olive trees world also around there. Just wonderful.

I second the suggestions of Baeza and Ubeda and would also like to suggest Consuegra with its windmills.

Baeza is lovely. I'm sure Ubeda is too, but we just saw Baeza. Jaen is also along the route and interesting. Finally, the Cervantes windmills at Consuegra are pretty much right there and well worth a short stop
