Questions about staying in/near Valencia Good Friday - Easter 2016

We are planning a two week trip to Spain in March 2016. We will be in or near Valencia from Good Friday - Easter Sunday. Because of the holiday we have a few concerns:

How far in advance do we need to book hotels or other lodging?
Will it be much more expensive because of the holiday?
Will restaurants be open on Easter Sunday?

Any advice you can give would be much appreciated.

You can check hotel prices for the weekend after Easter for comparison. Do NOT use the weekend before - in 2016, that weekend is the culmination of Las Fallas (Fire Festival) and prices are sky high - easily 3 or 4 times the regular rate.
