I am looking at apartments and houses to rent for our visit to Barcelona (5-6 days), and there are some beach homes in Castelldefels. It is a 30 min train ride to Barcelona, but we can leave our rental car at the house and take public transportation in/out of Barcelona. Is that a good area to stay and visit Barcelona?

I would not recommend doing this. Stay in Barcelona proper for the best experience.

It might be convenient for you with a car, and it is certainly close to the airport. Barcelona is easily accessible by train, but make sure you check the timing* of the last train back at night. I stayed for a week once nearby in Port Ginesta, but without a car, and felt a little isolated. Castelldefels is more family oriented and not particularly ‘glamorous’, but perfectly fine. Just make sure you are on the beach side of the main road.
*Last departure is nightly at 11:58pm from Passeig de Gracia stop on the R2 Line.
