driving up from Barcelona in a rental car on Thursday May 2, 2024. We plan to arrive around 11 -12. Will we be able to find parking in the parking garage at that time after we drop our luggage off at the hotel?

It will be a bit of a pain. We did the same thing in Septmber. The parking lots are typically very full. You will find a place but who know's how far you will have to walk. The good thing is that arriving around noon will mean that early morning day trippers will be leaving and opening up some space.
