I am going on my first solo European adventure this September/October and will be in Seville for my 28th birthday (October 2nd). Looking for suggestions for exciting/fun things to do!
Alexandra Happy BDAY and congrats on first solo adventure! I love celebrating my B Day in far away places. Seville will have tons of fun stuff to do- check any guide book and stop at the TI for maps and such. May I also suggest that you "splurge" for yolur b day with a special meal or a day tour. And my final suggestion that has reaped great benefits on my 70th/72nd and last spring 75th Bday for me - don't be shy TELL fellow travelers, your waitress, the front desk or your airbnb owner that its your Bday and you are solo and see what they suggest. I have shared Greek donuts with members of a day trip in Greece/ ate spice cake with my owners in Ecuador and been hosted at a locals for birthday snack/ meal. Most of all be glad you are lucky enough to celebrate in a new place!

I am not sure what your definition of fun/exciting is, but if you are a foodie and want to try some of the best Jamón ibérico Spain has to offer, I would recommend you visit "Cinco Jotas Sevilla". For me, tasting a really good Jamón ibérico is an exciting experience itself, especially if they hand carve it in front of you! Although it may be a bit pricey, it is definitely worth the splurge. Hopefully that is something along the lines of what you were thinking :)
I celebrated a 28th birthday once too! But I think mine was spent in Schenectady, hard to remember back that far. In Seville, I would definitely start with Churros & Chocolate, I found a great little hole in the wall place just off the Placa Alfalfa. Then in Seville, it is hard to beat the central placa where the Cathedral, Belltower and Alcazar are all located. Great restaurants and tapas bars nearby too.
