Spain Itinerary Feedback

My wife and I are going to Spain for first time in mid November for 2+ weeks - the rough itinerary is below - we are trying to avoid packing and unpacking too many times so will have 4 home bases - my basic questions are
1) can I fit into a trip to Granada - like on Day 4 take early train to Grenada - tour the Alhambra - then take train to Seville
2) is there too much time in Valencia (notably in November)
3) aside from Jerez where we can do sherry tasting we aren't obviously in the middle of any wine region I think - should we think about that in Madrid or Barcelona to visit a winery or just find the best wine bar?

I would not do train from Madrid to Granada, then Granada to Sevilla on the same day. It's too much time on the train, plus time spent waiting for trains, and you will have no time to enjoy Granada. The Alhambra is worth seeing, but so is the city. If it were me, I'd cut a day off of each of Valencia and Barcelona and spend some time in Granada.
You can do plenty of sherry tasting in Sevilla. We took a sherry and tapas tour there, and it was fun, especially since we knew very little about sherry. Madrid and Barcelona have plenty of wine bars. We prefer time at wine bars to winery tours, but that's a personal preference.

Valencia is a nice city but since you are already going to Sevilla I'd use the Valencia nights to visit Cordoba and the Mezquita and Granada and the Alhambra which are spectacular

I agree with Tinac. Valencia is the sort of place I'd recommend after folks have been to Barcelona, Madrid, Toledo, Cordoba, Seville and Granada--and probably also Girona and Segovia. But perhaps Valencia is on your itinerary because you're a big fan of contemporary architecture.
