Southern Spain in January/February?

We were just about to book our trip this winter to Morocco when we heard about the devastating earthquake there. Now we are trying to pivot and come up with another trip for late January/early February. Thinking of a trip from Seville to Granada, stopping in various towns along the way.
I do not mind the cooler weather that time of year as it will still be nicer than home. Is there any other reason not to go that time of year?

I've been to Madrid and Andalucia twice in February. Most days were in the mid to high 60's and sunny. My first trip was 23 days with no rain. Hotels had low season prices and there were no crowds. Sunrise in Sevilla on Feb 1 is about 8.15 and sunset around 6.45. While I ate indoors in the evenings, afternoons were usually warm enough to sit outside. Mardi Gras is in mid-February in 2024. Check what's happening in Cadiz, which has big celebrations leading up to it. Hotels there are usually higher priced, but Jerez is a good place to stay, low key and some interesting things to see/do and easy commute by train to Cadiz.
