Realized with 2FA (text message code) being ubiquitous, I might need to receive iMessages to my US phone number while in Europe.
This will still work, right? Doesn't iMessages use Apple ID to determine the recipient?

Yes! Make sure when you activate your esim that you keep the phone voice setting as Primary (your US esim) and the cellular data as the Travel esim.
I have Xfinity mobile that uses Verizon network. I also have “voice over wifi” enabled. But that setting has to be enabled while you are still in the US. Under cellular settings.
