Any suggestions for seaside towns near the Valencia and Barcelona are greatly appreciated. We want to avoid the city feel but want to see/do a few things in Valencia and Barcelona. We weave a car or can use public transportation.

Near Valencia I would suggest Denia.
If you rent a car I would suggest the beach coves near Begur, north of Barcelona and within one hour of Girona.
