When does one's validity period start, date of purchase of the Eurail pass, date of activation, or date of first ticket purchase?

The ticket starts when you validate/activate it. You will certainly purchase it well before you use it; and for reservations, you will purchase those long before you travel.
Spain is problematic for a pass, tickets require mandatory reservations in most cases, that are restricted in number. Many find it easier just to buy point to point tickets well ahead.
But if the numbers and value to you work out, great, go for it.
