RS does not cover Valencia in his book. Some friends loved it there. Any experience, opinions or advice?

Some people love it and say it’s a must see. I’ve been there twice and believe other cities have more to offer.
I think a great deal depends on how much time you have and where else you want to go. I'm a big fan of itineraries that make sense geographically.
I have a hard time believing many people would rate Valencia over Barcelona, Madrid, Toledo, Seville, Cordoba or Granada. I haven't yet felt I needed to go there despite having spent 3 months north of Andalucía in 2016, but I assume I'll like Valencia well enough when I finally get around to visiting it. I typically enjoy comparatively non-touristy cities.
Incidentally, there is a very nice small town on the AVE line between Madrid and Valencia. I highly recommend at least one night in Cuenca if you are planning to see both Madrid and Valencia. The rail tickets can be very reasonably priced if bought early.

For Eating, I recommend you Tabella by Pablo Chirivella. Is not far from the Casino, but the food is fantastic! Friends experts on wine and food recommend me

It really depends on your overall itinerary and your interests/style of travel. And your friends may not have the same interests/style as you do. Compared to the other major Spanish cities, Valencia does not offer as much as far as major attractions/museums. I would not make it a stop before you've visited most of those other cities. And I would not go out of the way to reach it on a short trip.
But it is a fantastic city. Beautiful architecture and lost of outdoor cafes to eat tapas and people watch. Lots of really good food and restaurants if you are a foodie. Very low key - the kind of place to spend a couple days just chilling. If you need to be constantly occupied, then skip it.
If you have the time, and are travelling between Barcelona and Madrid, then the route via Tarragona, Valencia and Cuenca is one very much worth taking. Otherwise Valencia can be seen as an out of the way ‘add on’ to your trip.
