We bought our AVE high speed train tickets online (thank you Rick Steves!) so I am wondering how early I should arrive at the station. Will we need to go through any baggage scanning or security before boarding? Any information and advice about the Seville train station and the trip would be appreciated!

Well, I don’t remember any chaos in the Seville station, but I was arriving (twice). Generally I would guess 30 minutes early would be plenty to go through the luggage scan and find your platform. And that is in case there is a long line like we had leaving Granada.
Edit: I am sure pickpockets exist but never saw nor heard of any except in Barcelona. Sevilla is a beautiful, relaxed city - normal precautions should be fine.
