I've stayed at the Amadeus on all three of my visits. I believe RS uses it for their tours as well. I've never had breakfast there - it's an add-on and I'm not a big eater in the morning, but I'm sure it's very good. It's not the cheapest option but in off-season the prices have been very reasonable. The location cant be beat. The ambience and service are excellent, there's a rooftop for views (there's a hot tub and a bar but they've been closed when I've been there in off-season.
We also stayed at Amadeus and enjoyed our stay.
While I am hardly a Sevilla expert, I can highly recommend the Hotel Las Casas de La Judería. Fascinating historic jumble of houses with beautiful courtyards.
Another vote for Amadeus and recommend skipping the hotel breakfast as a 100 yard walk provides several excellent places to enjoy breakfast.

As far as location for Amadeus is it conveniently located to do all the touristy stuff? I hear that I should skip the breakfast at the hotel& look for local breakfast options. Any suggestion where?

We couldn't get into the Amadeus. So we ended up at the Hotel Becquer. And it was amazing - enormous room, biggest bathroom I have ever seen in a European hotel; helpful staff, and within walking distance of everything.
The Amadeus is walking distance to just about every where except the Santa Justa train station. The only place I can remember being a long walk was the Plaza de Espana. BTW Las Casas de La Juderia is only a couple minutes' walk from Amadeus and more expensive. It is worth entering to walk around just to see.
We just returned from 2 fabulous weeks in Andalucia which started in Sevilla. We stayed at Hotel Murillo which met our criteria of easy walking distance to everything, clean, and basic (spent little time in the room...tapas bars kept us out late). I actually don't recall much about the room other than it seemed fine and was quite soundproof - found that out when opened the windows and heard the noise from the outside cage tables right below us.
Adding to what Chani said, the Plaza de España and María Luisa park are about a mile from Amadeus. The cathedral, Alcázar, and Giralda tower are about a five minutes walk, while the riverfront and Torre de Oro are a couple minutes further.
I was also very happy with Hotel Bécquer, I've stayed there three times. In addition to what's noted above, it's a good choice if you'll have a car. It's got a garage and is accessible via main roads.
We stayed at Hotel Alfonso XIII. While it is pricy I think it is a fabulous hotel, and very centrally located. It is more of an option if you want to splurge.
Our RS tour stayed at the Dona Maria Hotel in Seville which was located within view of a plaza and a cathedral! Less than a block from the front door of our hotel was the amazing Sevilla Cathedral surrounded by Plaza Virgen, horse drawn carriages and the Giralda Bell Tower with the Alcazar close as well. Breakfast was typical and good restaurants for lunch and dinner were located within very short walking distance.
