Recommendations for a boutique hotel ($175 or less/night) with great location in Seville. We want cafes, tapas bars outside hotel door and bull ring/cathedral really close. We love hotels that look out on pedestrian streets with lots of action. Your thoughts?
I like El Rey Moro and it seems to fit your criteria. The cathedral is close, but not the bullring (I don't think anything is close to both!). You sound like you'd like barrio santa Cruz, which is near the cathedral and is an active, pedestrian area with narrow streets, and bars and restaurants galore. Very scenic and atmospheric. The hotel I mentioned is in this area, as are plenty of others.
I've stayed twice at the Amadeus. Lovely, but no street views from the rooms. Great views from the rooftop terrace, though. It's in the Santa Cruz area and easy walking to the big sights. It's on a tiny side street, so it's quiet. Lots of cafes 2 minutes away.
Thank you both for your suggestions. Sadly both hotels are sold out for our dates (3 nights in the later part of September). Any other thoughts?
I stayed at 2 star Hotel Simon right by the cathedral.

We're going to Seville for the first time the end of September. We are staying at the Hotel Confortel Puerta de Triana.
We stayed at El Rey Moro last fall. It fits your criteria. It is definitely ground zero tourist-wise though.
We are also staying at the Hotel Simon. We love the atmosphere and "Old World" style. Since we are not planning on using the hotel for more than a shower, sleep, and rest place, we don't care too much for all the fancy schmancy hookups that more expensive hotels offer. For 3 nights, we are paying 205 Euros.
Hotel Casa 1800 Sevilla. We paid 164E a night and it was in the heart of Sevilla with a fantastic Tapas bar at its doorstep and many more sprinkled around it.
Great room, clean and really good breakfast.
