Segovia and roasted suckling pig

We plan to do a day trip to Segovia from Madrid in early September. My father is looking forward to having roasted suckling pig for lunch. Are reservations necessary ahead of time? As we haven't decided on the exact day we'd like to make the trip (most likely a weekday), can we make the reservation the day before or the morning of? The places we are considering for lunch are: Meson de Candido, Meson Duque, and Jose Maria.

I had this regional treat for lunch at Meson de Candido and it was excellent. I did not have reservations and was seated immediately. It is a large restaurant but you can make online reservations on their website.

I recommend Jose Maria. The place is very large and the food was delicious, just don't fill up on the tasty tapas in the bar or you won't have room for the meal!

I concur with the recommendation of Jose Maria. It is very large but a really nice dining experience. We ate there with our RS tour of Spain in 2015 and felt the experience was excellent. Not sure about reservations but it might be wise to check online to see if there is a reservation process. Enjoy your trip to Spain!
