Myself and 3 other women will be in Santiago for one night in a few weeks. Anything we must see/do/eat?

Do you mean Santiago, Chile? Or Santiago de Compostela, Spain??
Chile:If you have time, take a short trip to Viña del Mar and Valparaiso. We stayed in
Valparaiso for a few nights, fun city. For Santiago, visit Cerro San Cristobal, the high hill in town, for wonderful views.
Spain: Santiago de Compostela is one of my favorite cities. We stayed in the Parador right on the square where we could watch the pilgrims arriving. What is now the Parador was built by Queen Isabella and King Ferdinand. It is an awesome experience to watch the pilgrims arriving from their long journeys.
Since this is posted in the Spain forum, I believe she is talking about Santiago de Compostela in Spain, not Santiago in Chile.
I wanted to be sure so I answered for both cities.

Loved Santiago, Chile and could mention some nice places to visit while there, but I’m sure this refers to Santiago de Compostela. It is a nice reminder to use full city/town names when soliciting information.
The main thing to see in town is the cathedral and the crypt of Saint James. The pilgrims mass is supposedly nice to go to. The square in front of the cathedral and Parador where most pilgrims end there walk is good for people watching. The main market was fun to walk through. A couple miles outside of the city is Monte de Gozo with the huge statue of pilgrims pointing towards the cathedral.
Just got back from there a few weeks ago after ending my Camino.
Best thing to so is their rooftop tour of the cathedral. They also have a night tour of the cathedral, but it started at 22:00, which was too late for me. The tours may be in Spanish, but who cares. You get to go places that aren't open to the public and the roof has such a cool view. The Pilgrim museum was pretty interesting. The square is interesting all the time, all day and all evening. Watching the sunset from the edge of the plaza, next to the Parador is lovely.
Actually, I just like walking around the streets, having some tapas or a coffee. Visit the oldest cafe in the city, get some churros there. Take some photos inside. In fact, sit inside rather than outside. It is so tough to decide where to go, there are so many awesome places.
