Santiago de Compostela to Bilbao

My wife and I are going to be taking 2 weeks to drive and explore northern Spain with stops in, Santiago de Compostela, Oviedo, Potes, Laguardia & Bilbao.
We will be taking daytrips from from our stops.
Any suggestions on food, wine, culture immersion & tours would be appreciated.

You're in for a treat, the northern coast is stunning, with excellent food throughout (hope you like seafood though). I have some scattered comments.
A specific restaurant recommendation if your budget stretches that far (approx €60/head without wine): restaurante "A Tafona" in Santiago de C. is truly memorable - bookings essential, well in advance.
Conversely, the restaurants with terraces above the river in Potes are quite hit-or-miss; I'm sure your accomodation will have advice.
As for cultural immersion... beyond of course Compostela, the level of religious devotion in Covadonga and Santo Toribio de Liébana (both reachable from Potes) is a sight to behold.

I liked the introduction-to-the-museum tour offered at the Guggenheim, which as of 2016 was free and conducted in English around what you and I would consider mid-day (but well before the Spanish lunchtime). When I took it, the tour began with some museum history and then did a good job of covering the first floor. I went back to that part of the museum afterward for another 15 minutes or so. The tour may be different these days, so you should check with the registration desk (where you must go to put your name on the list for the tour) to figure out how best to spend your time before the tour starts. I think I showed up just 30 minutes early; I don't know whether that's sufficient these days.

Don't miss Getaria (about 15 km from Donostia - San Sebastian). Beautiful sea-side fishing village - home of Elkano and Balenciaga

Along the coast is a cave in a most lovely setting. It does have cave paintings and you can go into the actual cave, not a replica.
Cueva del Pindal. It is suggested that you make a reservation a day or more in advance. We were just lucky when we found the place that there was room for two more in the next tour.
