Does anyone know--
Spain requires a return ticket to prove you will not be staying past 3 months as a tourist. But must it be back to the US? I plan on staying three months and then going to Turkey. Will this suffice?

Be careful: the rule is 90 days, not three months. And it is best to keep a day or two of buffer, in case a flight gets cancelled or delayed.
Otherwise, a ticket to Turkey will do. In practice, this requirement is seldom checked.
In general countries with these requirements don't care where you go so long as they leave their country. For countries like Spain where you may well be on a train - its probably good enough to show proof of leaving somewhere in Europe within 90 days
