Restaurants in Basque country

I will be staying in Bilbao, Santander, and Oviedo and would appreciate any recommendations for restaurants, especially tapas and seafood places.

Hi Jim, just a little geographic positioning, Bilbao is the only town on your list actually in the Basque Country :) - Santander is in Cantabria and Oviedo in Asturias, they probably won't appreciate being referred to as Basques because of past history and all that, just a little heads up ;)

Anyway, back to food, when in the Asturias region, make sure to try the local Sidra (hard apple cider) and make sure they pour it in the traditional manner (from very high up). Most resturants in Asturias will offer Sidra with the meal, but if you want to go to a specialty Sidraria, Tierra Astur Gascona in Oviedo is a good option, it's located in the old center.

In Bilbao, the Ribera Market has some pintxo places that are open every day, and were both inexpensive and tasty (the rest of the market, mostly fish and meat stalls, is closed on Sunday).
