Visiting in October , Local suggestions. Casual Mid price (because pricey doesn't always mean really good) to bakery to cafeteria, a "nice lunch or dinner in each city. That place you went to that was surprisingly good or a value. Thank you.
CORDOBA: EL PISTO. Fantastic atmosphere, filled with locals; a series of beautiful historic rooms--tiles, wooden beams, etc. First-rate Cordoban dishes. Very moderate price. Book ahead for table seating. (I ate here several time during my five nights in Cordoba last year)
NOOR is the city's "star" eatery, but it's become quite expensive and is tasting menu only and requires booking far ahead.

Recommend booking ahead for all of these restaurants, both here and in Sevlla. Most take online bookings. BARRA DE INCHAUSTI requires a phone call to book.
SEVILLA: (I just returned after five nights here; I go fairly often) and on this trip, liked very much:
BODEGA E.MORALES. Another long-running traditional restaurant with great Sevilla specialties at moderate price
Not sure if booking is possible but just go early and try to snag a table; otherwise perch at the bar. One of a number of great quintessential Sevilla bar/restaurants.
BARRA DI INCHAUSTI.. Seafood restaurant owned by a Sanlucar fishing family. I recommend the bar area, rather than the slightly more formal restaurant dining room. Terrific specialties from the Cadiz coast. They have their own fishing boats. Also moderate. Near the Cathedral. Probably limited English from staff but they are super friendly and helpful., Very few foreigners go there. Very solid spot. I paid under 12 euro for my two course dinner with wine.; see notes in the link, below: A few steps away is MITO, for ice cream.
AZOTEA, LA TIENDA. One of my favorites in Sevilla; I've been many times over the years, to the location off BarrioJudio/Santa Cruz, with ) Modern takes on Andalusia classics. (I had an issue with my razor clams and they'd took this off my bill without me asking.). Highly recommend their crisp phyllo pastry filled with creamy cheese, with a sweet-ish red pepper sauce...menu changes often; English spoken.
BARRA BAJA. Excellent food, seating at bar or at very few tables. Short menu, open kitchen so you can watch chefs if you sit at the bar, as I like to do. A fairly new place near Plaza del Duque.
Cafeteria Donald is a reliable, more-than-fifty-year-old spot in Sevilla. inexpensive.

You do not have to tip in Spain unless you really want to do so. But you know that, already.

In Seville last month, we ate at La Gascona, which is in the Triana neighborhood. I had some kind of fish dish.
In Madrid last month, we ate at Posada de la Villa. It's a very old restaurant. We had the roast lamb for two people.
Both of those were very good.
I have a long list of favorites. I have suggested the below based ambience and value for money.
Seville:
Ala Wadi is a good option. I've dined there about 30 times, and have never had a bad meal. Well priced with many vegetarian options.
Also enjoy Casa E Morales, located across the road from Al Wadi
My favorite Pastelería in Seville is La Despensa De Palacio, serving Coffee with delicious cakes.

MADRID: Sala de Despiece (SDII) is reported to be moving, so check that before you go. it's now on Calle Ponzano, which is lined with the type of places you are looking for, and does not get too many foreign tourists, except for the ones that go to Sala de Despiece.
I thought it (SDD) had gone downhill by the last meal I had there, last November, but it is a fun place; almost all seating is at the counter so it's cramped. Do try the "Rolex."
I have pointed a lot of people who ask me about dining in Madrid to LAKASA. Beautiful place, large menu and they will split dishes if you want to try many things....really solid place with very good value for money. Two can et and rink very well with wine for well under 100 euro.
