Just play it by ear, and find one that looks interesting to you as you wander the towns. The area you’re staying in, in each city, would be beneficial to know. That might help with specific suggestions, as would an approximation of how much you might want to spend. Like in the states, food establishments run the gauntlet from street vendors to fine dining to fast food.
What is your budget? Any foods you just don’t eat ?
In Cordoba, Taverna del Rio on the river (I've only been there for lunch), Taberna La Montillana for dinner outside in front of the floodlit church, and Casa Rubio in the Juderia. The last two seemed to be have more locals than tourists.

Kurtuba Gastro bar in Cordoba for lunch. The four items we had were all very nice. And while sangria seems to be for tourists, the wirery guy here made the best we have ever had, anywhere, anytime. We spent half hour trying to identify the ingredients. He did confess that cinamon was included.
This restaurant has nice outside seating. It is in an area most tourists might not get to. It is not far from the Roman ruins and the farmers market. Between here and the next suggested eatery arre many nice churches.
And for supper...Taberna del Rio near the river, hence, rio. This is nicely placed so you can stroll along the river. Cross the Roman bridge and visit that small non-tourist area. Take amazing photos of the city from the bridge. Recross the river and continue on to the restaurant. Returning, I would suggest crossing the bridge again now that the night lights are on. Very romantic.
The first time you walk to either restaurant, they will seem to be at the far ends of the world. Neither is, as a second visit will demonstrate.
Sevilla. Fargo and Tradevo. Both in the neighborhood of Alfalfa. Both are north of the cathedral and close to the 'umbrella'. Or parasol. The neighborhood really hops at night.
And a warning. The official paper maps for Cordoba, Granada, and Seville have north 80 degrees to the left of top dead center of the sheet.

We really enjoyed Eslava in Sevilla. It is a tapas bar and sit down restaurant. I was having back problems so we booked the sit down restaurant. When we got there the tapas bar was 4 deep, spilling onto the sidewalk. The tapas looked amazing but our meal was great and there was an assortment of their most famous tapas available. A short cab ride from our hotel. http://www.espacioeslava.com/en/restaurante. In Cordoba we loved Casa Mazal a Sephardic Jewish restaurant. Elements of middle eastern, Spanish and Turkish cuisine.
