Trying to choose between the following 3 Flamenco shows: Casa de Memoria, Teatro Flamenco Triana, & Museum del Baile (although not so interested in the museum itself). Any thoughts? Thank you!

If you want a very theatrically polished performance, I would go to Teatro Flamenco Triana. For something a little less showy, more intimate, still colorful and highly skilled dancers, I'd recommend one of the other two.
I'll also mention that the performers will vary from evening to evening and across seasons. So unless you research specific dancers - which most tourists wouldn't do - you'll be choosing a venue based on the style of performance that they offer, the typical skill level of their dancers, and the venue itself.
Teatro Flamenco Triana is arranged like a small theater auditorium with a raised stage - perhaps 3 or 4 feet above ground level - and seats like in a small theater, sloping slightly upward away from the stage. The dancers will seem to be "up on the stage." It will feel like the dancers are performing for their entire audience, gazing out across the 12 or 15 rows of seats.
The stage of the other two is a low wooden platform, 1 or two steps up from ground level. You will feel much closer to the dancers in these venues. Your eye level will be about at their knees with a clear view to watch the amazing footwork. The dancers will seem to be "right there in front of you." You'll almost feel like they're performing just for you, and you can make eye contact with them. Very personal as they connect with people in the 2 or 3 rows of seats.
If you want to "watch" a performance, the Teatro Triana is exactly that - theater style Flamenco. If you want to feel like you could connect with the dancers you are watching, the other two are the more intimate venues.
And if you're still having a hard time choosing, they are all good, choose based on convenience of time and location.
