Depends which route you are going to take.
Via the coast, Estepona is a charming and largely unspoilt town.
Cross country, the villages Jimena and Gaucin would be worth a lunch stop.
Nowhere is particularly stunning, unless you do a detour via Casares, which is pretty attractive with great views up to the castle and down to the sea.
Thank you. Our route is flexible. We can also drive direct to Ronda and venture out from there.

I forgot Ubrique, a small detour, which is the centre of craft leatherwork.
Apart from the main road between Ronda and the coast, itself "interesting", the country roads can be slightly challenging.
I lived near Estepona for 12 years and we often used to go walking in the hills/mountains all round there.
It's really nice that you will be seeing real Spain.
I don't know where you will be before Tarifa, but a couple of miles west is a beach used for windsurfing and kite sfurfing competitions. Nice rustic bar/cafe.
