We will arrive in Barcelona approx 3 weeks before we need to train from Sevilla to Madrid in mid-May. Will that be enough lead time to get a good price & have ticket availability on AVE train tickets for 2 people at the travel agency within the Barcelona dept store that R Steves suggests purchasing them from?

You can usually book your train tickets 60-90 days in advance on the Renfe website if you're looking to get discounted tickets.
Make sure you pay with PayPal if booking via Renfe.
