The AVE (high speed train) from Madrid ( Puerta de Atocha Station) to Valencia only takes 1Hr, 45 minutes.
She could take a taxi from the airport directly to Puerta de Atocha train station or the C-1 Cercanías (commuter train)

While it's very rare that you can't simply walk to the station and buy a single ticket on the spot for this particular itinerary (Valencia), it's highly recommended to pre-book online, especially during summer months. Check the train schedule and pre-book here: www.renfe.com
As per going from the airport to the station, there are a number of possibilities although the commuter train is probably the most efficient. And it's totally safe, btw! Furthermore, note that with the purchase online of a fast train ticket (AVE), the commuter train from the airport to the train station in Atocha is included (more info:
