Some time ago I remember hearing that hotels will provide some compensation for American travelers who are willing to converse with Spaniards who want to practice their English. Cannot remember details, but would love to spend more time in Spain.
Sadly for you, not in Catalonia, that's for sure.
In all my travels to Spain, I’ve never heard of that.
Are you thinking of the volunteer program at VaughanTown?

I've never heard of such a practice, never witnessed it and would be intrigued to find out where this takes place.
Yeah, I have not heard of this either, I think I can safely say that most hotels have not either.
As for programs like the one linked above, do consider that even volunteering can run you afoul of restrictions against working while on a tourist visa(or visa exemption), especially if it can be shown that you are somehow compensated or benefit (A room, Meals, anything of value.)
