Thinking about shifting to adding an extra night in Valencia, this would leave 2 full day to explore Granada rather than 3.
2 nights in Valencia
3 nights in Granada
1 night Ronda
5 nights in Seville.
Question: Which city benefits more from an extra day Valencia or Granada? Already planning on all the "must sees".

Valencia, for sure.
I think the shift is good. A single night in Valencia is basically no time at all. You arrive, settle in, and the next day you leave.
And I think two full days in Granada are adequate.
But how are you traveling between cities? Renting a car? Train/bus? You might have some long journeys that will eat into your sightseeing.
I agree that 4 nights in Granada is overkill. Valencia is a good choice.
