Planning on being in Spain for 13-15 days. We will start in Barcelona then Seville & Madrid. Hoping to split up nights between the 3 so that we don't have o keep packing up and moving. Right now I am trying to get ideas and suggestions for day trips from Seville. We will be using public transportation. Any help is appreciated.

If you're interested in Roman ruins, Italica is an easy daytrip by bus from Seville.
If you're not seeing Cordoba on the way between Madrid and Seville, it's an easy daytrip from either one. I believe it's potentially cheaper from Seville, as there is AVANT service (same speed as AVE but much less expensive).
One place that is definitely NOT a daytrip from Seville is Granada. It's several hours each way, and since the entry time to the Nasrid Palace at the Alhambra is very strict, you really need at least one night there (the night before your palace entry time).
For me, going to Italica by bus was a real pain in the neck. Buses were infrequent and slow. The best of Jerez are the horse show at the Royal Equestrian School (only a couple times a week) and sherry bodega tours (Tio Pepe is the most fun). Cordoba is a must (though it's much better for a couple nights). To get to Cadiz you go through Jerez by train, to get to Arcos you need to go to Jerez, then take a bus, so it may be possible to combine Jerez with one or the other (I'd choose Arcos), in the afternoon.
I certainly agree with the other posters that your first choice for a Sevilla day trip should be Cordoba. Another great trip from Sevilla, about one hour by train each way, is Jerez de la Frontera. The horse shows are wonderful (book in advance) and a visit to a sherry company (I went to Tio Pepe) is another fun activity.
I am spending several days in Sevilla in March with my dad and am planning on taking day trips to Cordoba, Parque Nacional de Donana and Tangier, Morocco. We also will only be using public transportation. Cordoba we will do on our own. Parque Nacional de Donana will be a guided tour as that is about the only way to do it. Tangier will also be with a guided tour. It will be a very long day, but it is important to my dad, so I am figuring out how to make it work!
What is the best way to get to the DOÑANA park using public transportation from Seville? That seems something we would very much enjoy.
The usual answer to that question with respect to just about any national park is "your own or a rental car". As a user of public transportation I've frequently been frustrated by the difficulty or impossibility of getting to beautiful natural areas without a car.
In this case there the bus company Damas runs two trips a day between Seville and Matalascañas Sunday - Friday. There are three runs on Saturday.
There's some useful information on the webpage of the Discovering Doñana tour company. Googling might turn up options such as bus tours from Seville.
cm: There are several companies that offer day trips from Sevilla. I am still researching them but I just googled it and started going through the list of companies/tours.
