Is there a easy place to park a car outside Seville and catch the metro? Have heard driving in Sevilla is tough. Also, what are the top three things to see there as we will not be staying overnight, but driving from Estepona?

A quick look on google maps shows Blas Infant - across the river - street view shows a large parking garage it is right off the ring rd on the west side of the city.

Whoa nellie! Your biggest issue is defined by the lack of knowledge expressed by asking what are the top three things to see in Seville. Seville offers many wonderful experiences and deserves more than a quick day trip so i recommend self conducted research (e.g. Tripadvisor) to evaluate where to invest your time.
Btw: you do have an IDP for driving the car, right?

There is free parking on the streets near the Silken Al Andalus hotel. There is a main road, the hotel and a road running parallel to the main road on the other side of the hotel. That road also has a bus line that runs directly into downtown. It's cheap, the parking is free and safe there, and easy.
