I am considering staying at the Parador de Córdoba as we will only be 1 night in Cordoba and we require parking. I am wondering how easy is it to get to the main sights from the hotel? Can we walk or is it close to public transportation?

While I haven’t stayed at that Parador, it is 3 miles from the Mezquita. It appears it would be easier to take a taxi than to take public transportation. Since you will have a vehicle, there are a couple free parking lots, across the river from and near, the Calahorra Tower (e.g., C. Segunda de Miraflores, 33).
