Unless things have drastically changed there is no US style of New Year's eve celebration. We were there pre-pandemic. The bars and restaurants began shutting down around mid afternoon on NY's eve. By dark, it comes early, most areas were closed and streets vacant. The same goes for New Year's Day as nothing is open. The exception were the restaurants associated with large hotels and they were packed with tourists. We had a guided tour on the morning of NY's eve and asked her nearly the same question as you are asking. Our guide encouraged us to lay in a good supply of cheese, meats, wine, etc. Our hotel had a great rooftop garden that was a good spot for our meals over the next two days. Our hotel did provide a good breakfast but after that it was our picnics.

Seville has a tradition of the locals gathering on the square in front of the big clock just prior to midnight with 12 grapes. With each stroke of the bells you ate one of the grapes and wished your neighborhoods good fortunate for the next year. A lot champagne and small fireworks. The square was packed, lots of noise, fireworks, cheering especially as the clock hit midnight and began tolling. By 12.30 am everyone had cleared out and gone home. And we walked back to our hotel almost by ourselves.

New Year's Day was very peaceful with lots of people strolling on the streets, in the parks, and just in general hanging out but nothing was open.

Good luck.

La Casa del Flamenco has shows every day of the year, including holidays! We bought tickets to attend on Christmas night at 7:00 pm followed by 9:00 pm restaurant reservations at Taberna del Alabardero. (There also is a restaurant in Washington, DC.) I'm not sure what the restaurant is doing in the evening but you could email them. I do see they have lunchtime reservations available. A late lunch lunch followed by a flamenco show sounds like a lovely way to spend New Year's Eve. The links are below.
