We are planning a trip to Madrid end of July. My teenagers are food lovers so we want to experience a food market for traditional Spanish dishes.

Most actual markets won't have much food to eat—they're stalls selling ingredients: butchers and fishmongers and produce sellers.
The Mercado de San Miguel, near the Plaza Mayor, has been converted into a foodie attraction, with lots of stalls of prepared foods and drinks. And tables at which to enjoy it all.
In addition to Mercado San Miguel there’s the smaller Mercado San Antón near the Cheuca metro stop. When we were there is wasn’t nearly as busy as the San Miguel market, but doesn’t have as many vendors either.
A more traditional market as Scudder described is Mercado Antón Martin. In addition to vendors selling meat, fish, produce, etc., there there are prepared food stalls selling cheeses, olives, Argentine empanadas, ham, wine, sandwiches, etc.
Also, Mercado de la Paz, a few blocks from El Retiro and Puerta Alcalá.
