I like that it is in historic center. Our time Madrid is short.

I would avoid viator as they sell others products, tours. Deal directly with a tour.

Look at Devour’s tour options for Madrid.
I did not use Devour Tours for a tapas tour, but did use many of James Blick's (a co-founder of Devour) suggestions to do my own tasting as I wandered around town. If you have a chance, and like food, I highly suggest looking up his videos on YouTube, he covers lots of thing on Madrid and a few other Spanish location, I found all of it helpful for my trip.

I did look at Devour tours and we've enjoyed Blick's videos.
Devour Tours is almost twice the price (65 euros vs 109 euros) and a bit too long for us (4+ hours).
I received an email response from Andres- owner of Walks of Spain- he was very prompt and responsive so I think we will book with him.
