Madrid + Seville - 11 day trip

Hi everyone, our family of 5 has just booked a trip to Madrid for 11 days over Christmas time (12/21 - 12/31). Currently, I'm planning to spend most of the time in Madrid with a few days in Seville. Through my research, I found Toledo, Segovia and White Villages intriguing and would really like to do a few day trips while there. I'm wondering:

1) The trip will be a bit tight... I'll need to be able to take the train to Seville and back on very specific days (12/26: Madrid to Seville, 12/29: Seville to Madrid). Renfe doesn't have tickets posted yet, or the (holiday) schedule. Are there any concerns about whether we would be able to get tickets for 5? How often do trains run between the two cities during Christmas/New Years time?
2) Pros/Cons to spending Christmas in Madrid vs Seville? I'm leaning towards Madrid as there will be more to see even with holiday closures.

Itinerary so far:
12/21 Madrid 5D
Day trip Toledo, Segovia
12/26 Seville 4D
Day trip to nearby White Villages
12/30 Return to Madrid
12/31 Depart Madrid

I'll be there a month after you with my wife, and for only 7 days, so we have a similar abridged plan. 4 nights in Seville, followed by 3 nights in Madrid. We will be flying in and out of Madrid and taking the train between the two. My general itinerary will be...
Saturday- Fly into Madrid and train to Seville. My understanding is we will need to take the train from the airport to another station, then board another train to Seville. I believe you can buy flexible tickets if you are unsure of exact departure time
Sunday- Alcazar and Cathedral in Seville. I'm still researching dining options, but may try to catch a Flamenco show
Monday- Guided tour to Doñana National Park (I like birds), Plaza de España and Parque de Maria Luisa
Tuesday- Explore the Barrio de Santa Cruz and possibly do a river tour or food tour
Wednesday-Train to Madrid with a stop in Cordoba to check out the Mezquita
Thursday- Prado Art Museum and Royal Palace of Madrid
Friday- Parque de El Retiro and Plaza Mayoez plus general wandering. I imagine Madrid will be very food-centric as that is what my wife is most excited for
Saturday- Depart

I wish I had enough time for Toledo and some other day trips like you!

Re Thur/Fri: I would prefer combining El Prado with El Retiro Park for one day and combining the Royal Palace with Plaza Mayor the other day. We also loved the Archeology Museum.
