Madrid>Granada>Nerja>Seville>Lisbon

Hi all, Looking for some travel advice for a trip I am planning roughly Aug 31-Sep 15 to Spain/Portugal from Seattle. It will be my parents, my husband and my then almost 2 year old daughter. My husband and I are very adventurous and have traveled much of Europe but we get ahead of ourselves sometimes planning forgetting we have a toddler and my parents who have never been to Europe so I want to see a lot but also not have it be a "go, go, go" trip.

Aug 31 SEA>MAD
Sep 1 - 3 Madrid
Train to Granada

Sep 3 - 5 Granada (maybe add a day here?)
Rent a car and drive the short ways to the beach (Nerja or Malaga) Any southern Spain beach suggestions?

Sep 5 - 8 Beach (Not quite sure which city yet)
Day trip to Ronda

Sep 8 - 11 drive to Seville
Day trip to Cordoba

Sep 11 return rental car and fly to Lisbon (We originally wanted to drive but with more research I have read the route is not the most scenic and it doesn't seem possible to leave the rental car in Lisbon)

Any suggestions on where to book Seville>Lisbon?

Sep 11 - 15 Lisbon
Day trip to Sintra
(Any other suggestions here)

Sep 15 fly home

Also, I have been flight shopping for this trip for sometime now, anyone know of a "sweet spot" in terms of when to book flights for this trip?

Return the rental car when you get to Seville. You will neither need it or want it there. Take the train to Cordoba - more comfortable and faster. Visit Ronda on the drive from the coast to Seville. It's scenic and fairly long, so why backtrack.

Use rome2rio.com to see which airlines fly to Lisbon. Use their websites to choose. If you have choices to compare, note all the extra charges and luggage allowances.

Be sure to get a car that seats 2 adults and a toddler comfortably in the back seat and large enough trunk for all your luggage.

There is no set time for this, and much of the "advice" ("always book exactly 92 days in advance for best prices" or some such) is outdated. The prices can change at any time, so all anyone can legitimately advise is keep searching, and when you see a price you can live with, book it immediately and don't look back. If you can be flexible with layovers and departure airports, you may have more options, but since you're traveling with a 2 year old, you don't want to have too much "pain" (long layovers, multiple segments, very early departures, etc).
