Devour tours started in Madrid and offers a number of options.
I have to admit I have never been on one of their tours, but they are highly rated, and I have seen many of their videos and those of James Blick, one of the co-founders, all very excellent.
If you are interested in Tapas, James Blick's videos on YouTube are a great started for getting ideas for your own exploration, or in prep for a tour.
