I am looking for recommendations for unique experiences in Madrid besides the Museums and going to Toledo and Segovia.
ie: half day cooking school. What other experiences? Also best place(s) to shop for stylist moderly priced women's clothing.

The Restaurant Botin claims to be the oldest restaurant in operation.
Besides eating there, and the food is very good, they give a tour with the history of the place before hand.
Their website is Botin.es. If you go to the website, click on menu and scroll down to secret route Botin. It was a fun afternoon.

If you want to eat at Sobrino de Botín, make your reservations a couple months in advance. It’s not a restaurant you can just walk into an expect to get a table. In 2024 I tried making a reservation a month in advance and the earliest available time was 11:30pm.

I also did a day trip to El Escorial (https://www.patrimonionacional.es/en/visita/royal-site-san-lorenzo-de-el-escorial), a UNESCO World Heritage Site which I highly recommend. And if you go, you should also visit the Chair of Philip II (Silla de Felipe II), a hillside where the king supposedly sat to supervise construction.
Also not too far away is Valle de Cuelgamuros (https://www.patrimonionacional.es/visita/valle-de-cuelgamuros-0), which is worth a stop. At the time I wrote, "I did not like this place. At all. But I’m glad I went to see it." Maybe read about it and see if the story is interesting enough to entice you to go.
