I am flying out of Madrid to Milan on a Monday. I have a choice between a 8:50 am flight vs a 11:50 am flight. Which would you suggest? Not sure how busy are the airport and traffic between those two time slots. Any advice is greatly appreciated. Thank you.

Figure out how you are getting to the airport. The Metro does not start running until 6 AM but goes to all terminals, some trains will run earlier, but to Terminal 4 only. A Taxi will be pricier, traffic going that way, early morning, will not be bad, probably worse for the later flight. The other advantage of a taxi is that you get dropped off at the entrance to the terminal, cutting down on your walking by quite a bit.
Aside from that, I prefer an earlier flight, gives me more of a day at my destination.
If Milan is your final destination I’d be sure to fly into Linate rather than Malpensa. Then, personally, I’d take a noon flight over a 9am.
Very little experience with the Milan airports, but I would also choose the noon departure - it gets you there before dark and I hate those terribly early trips to the Madrid airport that I seem to wind up with.
